Cycling injury...

Camping!

We went camping a couple of weekends ago at Lake Walupt with Tessa, Jeremy, Kate and Jordan. It was REALLY fun! We spent most of the weekend in socks and sandals and wearing winter coats (i.e. it was cold). We ate yummy food and ate so many marshmallows.




After camping, we drove to Tieton and stayed at my parents house for the night (they were out of town!). It was so relaxing and fun. We drank coffee, picked berries from the garden and visited old friends. We spent the next day antiquing and bought these amazing scissors that basically look like this and went on a roadtrip through so many cute small towns.
We have decided it would be best to build a tiny house in Thorp on the river and take over the town. If you are trying to find us in 3 years, that's where we will be.

We ate a yummy fried lunch in Roslyn and drank beer before dinner-time and I remembered what it was like to have time to relax.




Ironman? Oh, no thanks!

This summer has been jam-packed full of fun! We have spent every weekend away since I completed school and it's already September (how did that happen?!).

We spent the first weekend with Brother Nick and Sister-in-law Hilary. Hil and I impulse signed up for an Ironman 70.3 in Lake Stevens during a moment of glory (we were totally hung-over...new years day). Eight months after the mistake, the day from hell arrived. Hil is strong. Really strong. And she trained...well. Really well. I trained well too...for like 3 weeks of the 20. I spent the last 3 weeks before the event resting after tweaking my knee. I couldn't run and cycling was uncomfortable.

I planned on not running at all and completing just the swim and bike. But just as I had managed to sign up for the event in a moment of glory, I also decided to do the run in a moment of glory. I had already swam 1.2 miles without a wetsuit (4 people out of 1400 were not wearing wetsuits to my knowledge...I was one of them) and road a horrible 56 miles on a hilly course and it was 95 degrees. Who really cares if you run 13.1 miles at that point? I mean, I already felt horrible and was so relieved to get off the bike that I figured that I would just wing it. Worst case scenario? Free gu's and gatorade.




So I ran. Well, I walked. And jogged. And ran a little bit. And I put ice in my hat and electrolytes in my belly.



AND I DID IT! THE WHOLE THING!! IT WAS AWFUL!!

Don't do it. I hate to be cynical...but DON'T DO IT! I don't even know if it was worth it and it's been 3 weeks.

I couldn't have done it without my so-supportive sweetie, Dashel, my brother Nick and his positive attitude, my sister-in-law Hilary and her dirty jokes or my amazing friends Christa and Brian for convincing at least 10 other people to cheer for me as I trudged by.

For those of you who didn't see it, sorry! It won't happen again!!

Recent cooking endeavors

1.) Tofu spring rolls. We went to Vietwah (local asian mart) and bought rice paper, bean sprouts and fried tofu. Picked scallions and lettuce from garden and made bomb-diggity wraps with yummy peanut sauce.

How do you make peanut sauce, you ask? Simple. Brown up some garlic in sesame oil, stir in some soy sauce, PB, water, oyster sauce (or some sort of equivalent...we used mushroom sauce) and siracha for spice. YUM!!

2.) No-bakes with agave. I rarely use agave for baking (mostly for coffee) but decided to wing it with a recipe from the following blog:


The taste was amazing. The texture could be described as "gross". Straight out of the freezer is the way to go.

3.) BBQ'ed Veggies. We have been BBQ'ing vegetables like whoa around here. Anything in the fridge or out of the garden, marinated in EVOO and Balsamic Vinegar with sea salt and black pepper. ME GUSTA!!

I might as well...right?

About a month ago, I decided to try out some of the other classes at the gym and found myself in a "bootcamp" class. The class itself was pretty boring but I did notice that there was a woman in the class that couldm't seem to keep up and/or she didn't quite understand what was going on. By the end of the class, I realized what was going on was that the woman was blind.

This morning before work I sat down on the bike at the gym and next to me sat the same woman. At some point in our "ride" next to each other, the woman asked me how many miles she had rode, her heartrate and the time. I read off the bike the details and we chatted about the gym, riding bikes, etc....small talk.

The woman told me that she was training for the STP (seattle to portland bike ride) in July and asked me to think about her on the 17th as she crossed the finish line. She has never been in a bike race before or really rode a bike (secondary to being blind). She is able to participate in the STP through a program called Outdoors for All and someone will be riding on a tandem bike with her the entire way to Oregon. She asked if I had rode the STP; I said no. I praised her for such a big accomplishment (not only just riding that far but for doing so as a mid-50's woman who has never rode a bike and is blind!). Her response to my praise?

"I might as well...I mean, it's just one pedal at a time, right"

Why am I so stressed?

Perhaps because my thesis is due in 5 short days. Or perhaps because I am so tired I could just fall over. In nursing school they always talk about a sense of "impending doom" as a sign of a heart attack. Perhaps I should use my lunch hour to walk down to the cath lab instead of the cafeteria...

Things people in my life should know

1.) I started back to school this week. My professors still interrupt on a regular basis.
2.) I started new clinicals at the St. Francis ED. First 20 minutes: sutures, I&D, GI Bleed
3.) Dashel and I bought a house. We move next week. In case you were curious, buying a house is stressful.
4.) Last weekend we went to Steven's Pass for the weekend for my friend's 30th birthday. Now I want to move to Startup or Index or Sultan or Skykomish. This is a problem since we just bought a house (see #3)
5.) I am working TOO much. Let's not plan on being friends for a while.

Best bread recipe ever!!

Have you heard of the book Artisan Bread in 5 minutes a day? It's amazing. So far I have only made the basic bread recipe but it was SO easy and you don't have to knead it! Yeah! You can use the bread dough for naan or pizza as well!

We don't have a pizza stone (and really need one) or a broiling pan (which we also need) so I used a cast iron skillet and cookie sheet which worked just fine although it did warp the cookie sheet after about the 10th loaf so beware!

Spring Break

I have officially completed 6 quarters of grad school and have only 2 left!! Yeah! Last quarter I worked at Planned Parenthood and a great Peds clinic in Burien. Next quarter I am in Federal Way at an ER which I am really excited about.

More importantly, I had the day off today for the first time in what seems like forever. I didn't have to work, I didn't have school and I didn't have homework! Whoa!! Also, Dashel was on his way out of town on a West Coast tour so I had the house to myself and nothing to do!

This resulted in me going on a 10 mile run with my dear friend Katherine, returning home and eating my favorite dinner, scrambled eggs w/black beans, spinach, tomatoes and LOTS of hot sauce (cholula is the best. tobasco is disgusting.).

After that I watched King Corn while making a delicious chocolate sheet cake w/buttercream and peanut butter frosting which was completely unnecessary and quite the contradiction but SO FUN!

I finished up a few loads of laundry and even washed the sheets! Now, I am off to bed by 10! What a day!

Oh the joys of a day off!

I have class at 6am on Fridays which makes me quite tired by the time Friday evening roles around. After class on Friday, I went to yoga and a physical therapy appt. The PT proceeded to tell me that I should stop running for a few weeks (which seems virtually impossible) or my hip pain is just going to get worse. Ugh. I hate bad news.

To start my weekend off (and to make my PT mad), I went to my Saturday running group in Columbia City (my dream neighborhood). Afterwards I came home and cleaned the house before heading out to brunch with Elissa and Patti Ball (plus a friend!) to my favorite restaurant, Cafe Flora. Delicious!!

I spent the rest of the afternoon and evening doing homework at Fuel Coffee with my dear friend and classmate, Katherine.

Since I finished a load of homework, I figured I deserved a treat! Soooo, I went cross country skiing this morning and dropped Dashel off to Snowboard. I only went for about 2 hrs but boy was it nice to spend 2 hrs alone in the quiet of the mountains. We came home and I attempted a wierd pot pie type recipe topped with biscuits instead of crust. So far it's not looking so great!

Next up is chili from the most recent Cooking Light and more homework. I love having days off!!!

I am starting to feel a little helpless with the whole Haiti disaster and can't seem to figure out any good fundraising activities so I decided to attempt at selling some photos from Haiti. 100% of the money will be donated to Partners in Health (PIH.org), a healthcare organization working in Haiti, started by Paul Farmer!!

Back to school, back to school...

I have one more day of freedom before I am back in the real world. This whole "working" thing is a total breeze! Add on a few classes and 20 hours of clinical and it becomes a bit hectic.

To start prepping for a very long first week back, I decided to make some food ahead of time. We ordered a box of vegetables from Full Circle Farms using a couple of coupons making it a sweet deal. Usually it's $30 for a box of veggies which you can have delivered weekly or every other week. I bought a great coupon at Groupon which was $25 for $50 credit. I also had a $15 off coupon from the Chinook Book! What a steal!

The box included: beets, carrots, purple potatoes, lettuce, braising greens, mango, pears, oranges, avocados, onion, cucumber, cauliflower and grape tomatoes.

I steamed the beets and covered them in balsamic vinegar, salt and pepper to top salads. Made a couple of cups of quinoa, slices all of the veggies for hummus and roasting and ate all of the carrots in the process.

I also did an experiment tonight making homemade instant oatmeal...and it worked! I often don't have time to eat at 6am when I am running out of the house and have been relying on granola bars, yogurt, hardboiled eggs, fruit, etc. but sometimes I just want something warm.

Soooo, I blended up some oatmeal, flax seeds and sunflower seeds into a flour and combined it with regular non-blended oats (equal parts), a pinch of salt, a pinch of brown sugar, coconut, cinnamon, raisins and more sunflower seeds.

I now have instant oatmeal without all of the extra junk and it wasn't made with quick oats! Some ideas that I read about online included adding coffee creamer, vanilla pudding mix, dried fruit, almond extract and making it with apple juice instead of water.

So far it tastes great!
